The best thing about Greek yogurt pancakes is you can grab any single serve yogurt you have in your fridge. There are endless possibilities for your flavor combinations. Strawberry, Peach, Coconut Creme, Banana, and Vanilla Chocolate Chunk. If you only have plain yogurt that works too. For the pancakes in the pictures, I used coconut creme yogurt and threw in some blueberries at the end.

What would be your flavor combination?
- ¾ cups all purpose flour
- ½ tablespoon baking powder
- ½ teaspoon kosher salt
- 1 egg
- ½ cup buttermilk
- ¾ cup Greek yogurt
- ½ tablespoon vanilla
- 2 tablespoons sugar
- Make the Pancake Mix: Combine the first 3 dry ingredients (all purpose flour, baking powder, and kosher salt) in a bowl. In another bowl, combine the egg, buttermilk, vanilla, sugar, and greek yogurt. Blend the dry ingredients into the bowl of liquids- stirring only a few times.
- Cook the Pancakes: Heat the griddle on medium high heat. Spray the griddle with oil spray. Use a ½ cup of mixture for each pancake. Cook for 2 ½ minutes, then flip and cook for 1 to 2 minutes.
- Garnish: With honey or your other favorite pancake toppings.
